In the latest versions, when we double click on the table name on the left, it does not "copy/paste" that table name for the query that we writing on the right side. We have to manually write the table name.

It's still there. The default setting was just changed, because some seemed to be annoyed by that feature. See issue #2307
You can enable it in the tree's context menu, under "Tree style options": https://www.heidisql.com/forum.php?t=44649#p44650

Indeed there were already quite a few asking why that's disabled now. Tink I enabled it by default again.
